THE VINTAGE

The 2016 vintage started in mid March, which was a slightly earlier time of year to harvest our Chardonnay grapes.  The growing season experienced average winter rainfall and temperatures were mild.  The summer was relatively mild and moist with small amounts of drizzly rain.  Birds were their usual hungry selves, so all vines were netted to prevent bird damage and disease.  This resulted in clean, ripe and well balanced fruit.  Harvesting was a challenging time once again, with constant light drizzle and cool temperatures. We successfully harvested the last of the white grapes before the heavy rain started.  The vines cropped and average of 4.0 tonne per hectare of fruit.

THE WINEMAKING

Wine makers: Anthony & Peter Buxton. Consultant. Michael Staniford.

The Chardonnay was harvested to achieve maximum fruit complexity and flavour. The fruit was de-stemmed, basket pressed, cooled, then cold fermented at 15 ºC in stainless steel tanks for 3 weeks. The wine was not wooded and bottled early with stelvin closures to preserve the vibrant fruit flavours.
