|The 2010 vintage was in early March, which is about our average time for harvesting the fruit. The winter was mild and wet as usual, followed by an excellent spring. The transition from spring to summer was sharp. The summer months were dry with average temperatures. The incidence of disease was very low. Given this and the great dry summer conditions, the resulting fruit was magnificent. The Chardonnay and Cabernet was easily managed under these conditions, was disease free and required few sprays. The fruit cropped at 2 tonne per acre was sound with great colour and flavours.|
Remembrance is a unique blend of Chardonnay & Cabernet Sauvignon. This Methode Champenoise is hand picked and each bottle hand crafted.The base wines were fermented in the normal way. At 8 months they were blended then bottled with extra sugar and yeast added to achieve secondary fermentation. The now sparkling wine was left on the lees for a minimum of 30 months and now 60 months.

|Palate||Grapefruit and citrus front palate leads to a more Cabernet driven mid-palate of redcurrant and berry flavours. The entire palate is supported by a savoury yeast autolysis texture and has an impressive long clean finish.|
