THE VINTAGE

The 2011 vintage was in early March, which is about our average time for harvesting Chardonnay. The winter was mild, with the latter part of spring being dry. The summer was typically dry with average temperatures. With these climatic conditions there was no disease resulting in magnificent clean and ripe fruit. The fruit cropped at 1.5 tonne per acre was sound with great colour & flavours.

THE WINEMAKING

Wine maker: James Kellie.

Seduction is a Pink Sparkling Wine made in the traditional method (Methode Champonoise).This wine is a Rosé style made from 86% Cabernet Sauvignon and 14% Chardonnay grapes. This Methode Champenoise is hand picked and each bottle hand crafted.

The base wine was quickly taken off the skins to achieve the soft pink colour. The base wine was fermented in barrels in the normal way. At 8 months the wine was then bottled with sugar and yeast added to achieve secondary fermentation. The now sparkling wine was left on the lees for a minimum of 24 months. Following this period the individual bottles are disgorged and packaged ready for consumption.

WINEMAKERS ASSESSMENT

Colour Delicate pink.
Nose An aromatic wine featuring ripe strawberries with hints of red berries.
Palate A soft fruitier strawberry palate leads to a more complex red berry mid-palate combining with the complexity and savoury yeast textures.
Cuisine Caesar salad, trout, marinated seafood & fruit.
Serving Temperature 8 - 11 ºC
